Have a Happy New Year!

Leftover Turkey Noodle Soup

We all love those holiday meal leftovers!  But, if you’re like me, I’m still full the next day.  Here is a light, but satisfying way to enjoy that leftover turkey.

1 clove garlic, minced

2 tablespoons vegetable oil

1 small onion, chopped

1 carrot, diced

1 stalk celery, diced

64 oz. chicken broth

1 bay leaf

1 diced potato (or sweet potato)

½ uncooked egg noodles

3 cups cooked turkey meat

Pinch of parsley

Salt and pepper to taste

 

In a large pot, brown the garlic lightly.  Add the onion, carrot, and celery.  Cook until onion is translucent.  Add broth and bay leaf and bring to simmer.  Add the potato and noodles.  Cook at a simmer for 10 minutes.  Add the turkey meat, parsley, salt and pepper, if needed, and cover.  Turn off the heat and let sit for about 5 minutes before serving.

 

*If you have other left over vegetables, like corn or green beans, you can add those, too.

*If your turkey needs a little more flavor, you can add a pinch of rosemary, sage, or thyme.

Serves 6

Crafting With My Grandson

My grandson is 3 and he loves to color.  So, I had him scribble all over a piece of white paper with green markers, crayons, and colored pencils.  Then, I cut out shamrock shapes from his colored paper and outlined them with black marker.  I glued these onto another piece of white paper.  You can use heavy weight paper, color both sides and hang them from a mobile or in the window.   They look a little like stained glass.
